How to make Swedish raspberry cookies Hallongrottor

Easy, fast, delicious and... swedish!

Today I would like to share with you the recipe of hallongrottor, which means raspberry cave in swedish.

These little biscuits are very simple and fast to bake, flavored with vanilla and filled with raspberry jam.

The key to successful hallongrottor baking is to work with some very soft butter, and whip it until it is super-soft.

One more thing: hands are your best baking tools, so I recommend you use your fingers to mix the hallongrottor’s dough.

Ingredients:

 

-200gr butter

-4,5 dl plain flour

-1,5 dl sugar

-1,5 tsp baking powder

-2 tsp vanilla sugar

-Raspberry jam

 

Cooking Time & Temperature:

10 minutes – 200˚C

 

Let’s go!

 

1. Preheat the oven to 200°C (392°F) and put 10 mini cupcake cases on a baking sheet,
2. Mix well flour, baking powder, sugar, vanilla sugar together in a bowl and add soft butter until it comes together into a dough,
3. Then cut out the dough into small balls,
4. Use your thumb to make a hollow on the top of each balls, and fill the cookies with a teaspoon of raspberry jam,
5. Bake for 10 minutes until golden, turning half way to get an even bake.
